We said pudding, and we meant it
This sits under 50 dishes so the ranking does not have to carry every sponge alone.
The short list
| Pudding | Why it earns a seat |
|---|---|
| Sticky toffee | Dates, sauce, heat. The modern classic. |
| Fruit crumble | Seasonal fruit (calendar) plus oats or flour and butter. |
| Spotted dick / steamed syrup sponge | School-dinner rehabilitation when made with care. |
| Trifle | Architecture: sponge, jelly-or-not wars, custard, cream. |
| Bread and butter pudding | Leftover bread, not a punishment. |
| Eton mess | Summer only, please. |
| Rice pudding | Skin-on, nutmeg, argumentative. |
Custard vs ice cream vs cream
Custard for steamed and crumble. Ice cream for sticky toffee if you want the hot-cold trick. Cream for trifle. You may mix. You may not serve a shop mousse in a cocktail glass and call it a British pudding.
When to skip
A laminated “twelve desserts” page in a chain pub is usually a freezer. One good pudding is a better end to a roast than three sad ones.
