The punchline expired. The map did not.

This page is the orientation before you dive into regions and dishes.

Four forces that actually matter

  1. Migration as cuisine, not garnish. Chicken tikka masala, the balti, Jamaican patties, Turkish ocakbasi, Polish delis, Hong Kong cafes — these are British food. See curry houses.
  2. Supermarkets as the default kitchen. Most people do not live next to Borough Market. Honest cooking here includes Tesco chicken and a bag of frozen peas.
  3. The roast and the chippy as civic infrastructure. Sunday roast and fish and chips are still how a lot of the island marks time.
  4. Markets and farm shops as weekends, not daily life. Brilliant when you can; not a moral test when you cannot. Markets · farm shops.

What we will not do

  • Pretend every gastropub is a revelation
  • Rank Britain as if London were the only postcode
  • Confuse “traditional” with “good”
  • Hide affiliate links on gift pages

A sensible reading order

New here: 50 dishes for appetite, then your region, then a seasonal pass so you are not eating strawberries in November and calling it local.
