Four forces that actually matter
- Migration as cuisine, not garnish. Chicken tikka masala, the balti, Jamaican patties, Turkish ocakbasi, Polish delis, Hong Kong cafes — these are British food. See curry houses.
- Supermarkets as the default kitchen. Most people do not live next to Borough Market. Honest cooking here includes Tesco chicken and a bag of frozen peas.
- The roast and the chippy as civic infrastructure. Sunday roast and fish and chips are still how a lot of the island marks time.
